All across the country for the last several weeks people have been gathering around their tv sets to find out just how one Walter White will find his end. Now, as of this moment (the moment that you are reading this) the finale is over and done with, however, our tradition of gathering with friends on Sunday nights has only just begun.
Every sunday evening a small group of friends gathers at our apartment. We make dinner, drink wine, talk, laugh, and watch televisions most gripping dramas (MadMen, then Breaking Bad); this really is the best way to spend your sunday night, I highly recommend it.
Each week I have been challenging myself to come up with new dishes or simply recreate old ones to meet the needs of a dear friend who just so happens to be Paleo (I won’t lie to you, I really don’t know what that means… All I know is he doesn’t eat grain, so baking has been an adventure). Given that this week was such a big deal, being the series finale and all, I wanted to make a dessert that was a little more risky, something, cracky (get it?).
-PALEO PUMPKIN BARS WITH GOAT CHEESE FROSTING-
What you will need for the bars:
2 large eggs
1/2 can organic pumpkin puree (not pumpkin pie filling)
1 cup coconut sugar
1/2 cup almond milk
1/3 cup melted butter (or coconut oil)
2 tsp vanilla extract
2 tsp maple syrup
1 cup almond meal
3/4 cup coconut flour
1 tsp baking powder
1/2 tsp baking soda
3/4 tsp sea salt
1.5-2 tsp cinnamon
1 tsp pumpkin pie spice
1 cup chocolate chips
In a medium sized bowl, whisk together the eggs, pumpkin, sugar, almond milk, melted butter, vanilla, and maple syrup. In a separate bowl, mix the almond and coconut flour with the baking soda, baking powder, sea salt, cinnamon, and pumpkin pie spice, stir until all the lumps are gone from the flour. Add the wet ingredients to the dry, stirring well, fold in the chocolate chips. Place the dough into a greased 9×13 baking pan.
Bake at 350 degrees for 20 minutes. Allow to cool.
While the bars in the oven, make your frosting.
What you will need:
1, 4.5 oz creamed goat cheese (the goat cheese equal to cream cheese, for those of us who are lactarded)
1.5 tbsp unsalted butter
1/2-3/4 cup powdered sugar
1 tsp vanilla extract
Whisk all ingredients until smooth and creamy. If you have a blender, go that rout, you will be far happier I promise.
Once the bars have cooled (if you have zero patients, pop those sucker into the freezer for 15 minutes) frost them with your goat cheese concoction and devour half the pan in one sitting… with a group of people (I’m not that much a fat kid you guys! Ok, I am but my obsessions for working out, out weigh my love of food right?).
Breaking Bad may be over, but Sunday night gathering will continue on. Does anyone have a good suggestion for the upcoming season? We are currently on the hunt.
