Let’s be for real, my addiction to mexican food has only gotten stronger since moving to LA (and it was already at peak status while living in GR, now it is out of this world). Whether tacos, nachos, burritos… anything that ends in “os” I’m down.
This love is of course layered with a healthy portion of avocado. I have even made savory pancakes (my other great food love) inorder to create the most beautiful mariage of food combinations possibly ever. Guacamole, plain, mashed, covered in paprika, smeared, or smushed, I could eat avocado all day every day.
I realize cinco de mayo is passed, but in homage to the celebrations I give to you guac-a-salsa, aka avocado salsa.
-AVOCADO SALSA-
What you will need:
2-3 Jalapeños, seeded and chopped fine
1 medium Onion, diced
5 Roma Tomatoes (3 beef stake tomatoes), seeded and diced
1 bunch Cilantro, chopped fine
6-8 Limes
6-8 Avocados
Sea Salt to taste
Chop the jalapeños, onion, tomatoes, and cilantro, place in a large bowl. Press the juice from the limes over the ingredients in the bowl, adding sea salt to taste (roughly 2-3 tsps). Pit and dice the avocado, adding it to the salsa, stir well and devour.
The flavor is fresh and paired with a great tortilla chip you can’t loose (let’s be for real, it is two of the best sides ever combined into one… how could it not be amazing?).
Though I wish I could, I wont take credit for the inspiration of this dish. A few weeks back a friend of ours had Drew and I over for dinner and his girlfriend made a version of this fantastic dip. It was so fantastic I just couldn’t resist the urge to share it with you all. So thank you Evie, you are a gem.
