There are times when I set out to transform an incredible sounding recipe from it’s original gluton filled state into something that I, the glutard, can eat. This means I can’t use ‘normal’ flour… which in most cases is pretty ok, there are times where you want the elasticity wheat based (white) flour has, but for the most part things come out exactly how I plan. Then there are times where I set out to bake a cake and realize half way through the process a cake simply won’t be happening and I need to come up with a more suiting alternative for the bowl of goo I have sitting on the counter before me.
As I am sure you have guessed, this recently happened to me. I got a little over ambitious you see. I tried to make this amazing sounding cake and instead ended up with the most delectable (paleo) gluten free, blueberry scones; a total win in my book.
-BLUEBERRY SCONES-
What you will need:
3/4 cup almond flour (almond meal)
3/4 cup coconut flour
2 tsp baking powder
dash of salt
3/4 cup coconut sugar
1/4 cup maple syrup
3 eggs
1 tsp vanilla extract
1 container plain yogurt (I used a coconut milk based yogurt, roughly 1 cup in total)
1/2 cup canola oil (or butter softened, only if the batter needs it)
1 cup blueberries
In a large bowl mix together all of dry ingredients, set aside. In a separate bowl cream together the eggs, yogurt, vanilla and oil, add to the dry mixture and stir until smooth. Add in the blueberries.
Form the batter into a medium sized ball and flatten lightly with your palm. Bake at 350 degrees for 20-25 minutes.
While the scones are in the oven cream together 1 stick farm fresh butter (any will do, farm fresh is just so damn good), 1 tsp lavandar, and 1 tbsp honey. Blend in your mixer or whisk together until the butter has reached a light, creamy consistency.
Remove from the oven and allow to cool (if you can). Slather with lavandar butter and die happy. These scones will toy with your emotions and leave you wanting more. They are equally good without the butter (if you want to save the calories), but Paula Deen would be disappointed.
