CHICKPEA PANCAKES

Some time ago Drew and I found ourselves gathered under the stars, eating amazing food, being carried away into the night on a ribbon of song at the RubiFox event in Ojai.

There was a girl there making fresh chickpea pancakes, hot off the griddle, for guests as they passed through the line. Unfortunately, I was unable to sample these amazing delights that night, however, Lydia, being the amazing woman that she is, consented to share the recipe with me! Hold on to your socks kids, these pancakes are no joke!

-CHICKPEA PANCAKES with MARINATED PEPPERS and HONEY-

What you will need for the peppers:

2-3 poblano peppers, cut into thin strips (roasted over an open flame, rinsed under cool water to remove the burned skin)

1/3 cup olive oil

1/3 red wine vinegar (I used white balsamic with 2 tbsp apple cider vinegar)

2-3 tsp fresh chopped rosemary

2-3 small cloves garlic finely chopped

1 tsp sea salt

fresh ground black pepper

Roast the peppers, remove the skin, stem, and seeds. Cut into thin strips and place into the marinade, allow to sit.

What you will need for the Pancakes:

• 1 1/2 cups white rice flour
• 1 Tbs Baking Powder
• 3/4 tsp Kosher Salt
• 1 16 oz can Chickpeas or Garbanzo Beans
• 1 cup Organic Apple Sauce, no sugar added
• 1 cup Milk (I used almond milk)
• 2 Eggs
• 4 Tbs Butter, melted
• 1 Tbs Honey
• 1 tsp Vanilla Extract

In a small bowl combine all the dry ingredients (flour, baking powder, salt)

Drain & rinse the chickpeas, put in large bowl & mash with a potato masher or pastry cutter
leaving some of the texture of the chickpeas.

Add the rest of the wet ingredients to the chickpeas & mix well (applesauce, milk, eggs, honey,
butter, vanilla).

Add the dry ingredients to the wet & mix until just combined.

Heat & lightly grease a griddle or skillet on medium heat.

Add about 1/3 cup of batter for each pancake.

Top the pancakes with the marinated peppers, goat cheese, and honey. As strange as they may sound I promise you the combination is unexpectedly divine.

Lydia comes from a line of cheese makers and can be found preparing delicious delights at Cortez in Echo Park on Sundays and her amazing talents are available for hire (do it, it is the best thing you will do all day).
