Don't you hate it when you have the best of intentions to do things in a timely fashion only to realize far too late that you will not actually achieve what you wanted do by the time you wanted to? Me too. Though sadly it happens to me all the time because I, much to my dismay, am easily distracted... *excuse me while I go cook something really quick*
Ok, I'm back.
Anyways... my point is, this very thing happened when I set out to make this recipe. I started prepping the ingredients, shot them, got distracted and by the time I was able to photograph (one) of the finished pieces it was dark out! So I did what any sane human would do and used the light of my laptop screen to illuminate the photo from above, brilliant right? Or maybe a little sad? Who can say.
-BANANA PANCAKES -
OR MUFFINS IF YOU ARE FEELING TWIRLY
What you will need:
2 medium/large ripe bananas
4 egg whites or 2 whole eggs
3/4 cup coconut flour (not packed down...also yes, I know that it is a 1/2 cup in the photo)
1/4 cup coconut oil
2 tsp vanilla
1 (heaping) tsp cinnamon
1 tsp baking powder
1/4 tsp sea salt
1 tbsp lemon juice (fresh)
2 tbsp-1/4 cup as needed of hemp milk (or milk alternative of your choosing)
Shredded coconut, cacao nibs or raw walnuts make AMAZING additions to the batter... just saying, you should probably consider adding one or all of those things in.
In a medium sized bowl, mash the bananas throughly. Add in coconut oil (best if a little bit melty), vanilla, egg whites (lightly whisked is best, though I usually forget), and lemon juice, stir until smooth. Add in the coconut flour, cinnamon, salt, and baking powder, if batter is feeling too thick add a little milk to thin it out (Not for the muffin option, leave the batter nice and thick).
Now for a couple of *OPTIONS*
Pour 1/4 cup of patter onto a hot griddle and turn this delicious batter into pancakes OR pour into muffin tins and bake at 350 F for 15-20 minutes (or until golden brown).
Serve with coconut whip cream, syrup, strawberries, or any other delectable topping of your choosing.
Play with the recipe, it needs a little more work I think. However, I wanted to share it because these suckers were so darn tasty I figured, I should probably just Tama-Risk it, be brave in myself and put it on the internet ya know? (shout out to a real wise 4 year old somewhere in the world and a couple of really great ladies of the GHC).
Also, let it be known that I made this recipe because I was craving pancakes, like a pregnant lady craves pickles and ice cream... or whatever. I HAD to have them, so I made them with what I had on me... and do you know what!? They were great! Not to mention totally worth every bite!
