I have been sitting, waiting, for inspiration to strike. Hoping for the words to flow freely from brain, to fingers to pen, to paper (or rather keys to wordpress)… but alas they refuse to come.
I tried to relay emotion and feeling, but it came out forced. I tried to keep things light with a little punch of humor, a quip to lift your mood, but I am afraid my funny bone must be out of joint, for I am as humorous as a horse (is that a thing? I feel like thats a thing my grandpa used to say so I’m going to roll with it).
Then I thought I may regale you with the story of how I recently fell in love with curry… in the home of dear friends, snow falling outside the windows, wine and good conversation inside, as a pot of curry potato soup boiled on the stove.
All of these things bouncing back and forth, playing ping-pong in my mind. Maybe instead I should just give you the recipe, allow the food to speak for itself, and bid you good day.
-CURRIED QUINOA-
What you will need:
Preheat the oven to 400 degrees
1 cup Quinoa (rinsed)
1.5 cups Water
1/2 cup Dried Cranberries
1/2 cup Raw Cashews
Chopped Onion and Cilantro (for those who would like it)
1.5 tsp Curry, plus additional
1 tsp Cumin
1/2 tsp Sea Salt
2 tsp Olive Oil
1/2 head Cauliflower roasted (sprinkle with spices above for added flavor)
1/2 cup Garbanzo Beans roasted (sprinkle with spices above for added flavor)
Place water, spices, and quinoa into a pot and cook until tender.
While the quinoa is cooking, roast your cauliflower in the olive oil and sprinkle with spices. When it is roughly 5-10 minutes from being done add the garbanzo beans and cook until slightly cracked.
When the quinoa is finished cooking add the remaining ingredients. Salt to tast.
This dish can be enjoyed either fresh and hot or chilled as a side salad.
The flavors are rich and savory. Drew, of course, added Sriracha and said it was divine, so if you crave a little heat add a drop or two.
