so... I intended to take a photograph of my usual "single serving"... but I was hungry. Roasted sweet potatoes and avocado dip was (at one time) in those bowls.
Just out of curiosity (though it may kill a cat) what is your go-to loner meal? Like... if you aren't cooking for people, your significant other, family etc. and you are home alone, what do you reach for? Meals are usually easier to prepare for more than one person, so what do you do when it is just you?
Are you a snacker? The person who would rather just grab some chips or munchies a little at a time instead of preparing a meal? (this is Drew)
Are you a loner gourmand? I had a roommate like this once. She would get home from work at like two in the morning and prepare elaborate meals FOR HERSELF! I'm talking full on, legit, beautiful, complicated meals... it was both annoying and impressive. (I am sometimes this person)
Are you a sandwich person? I envy you.
Frozen food? Fast food? Take out? Order in?
Chinese? Italian? Mexican? American (seriously though... is 'american food' just considered burgers and bbq?)?
I ask because I have gotten into the habit of roasting veggies when making food only for myself. They are so easy and satisfying! When I was living with roommates (pre-Drew) I would make scrambled eggs with goat cheese, mushrooms, and spinach a lot (random right!), I went through a rice cakes and peanut butter phase, popcorn and an apple, not to mention tortilla chips, hummus and sreracha (the holy trinity) a food group unto itself; and of course, black beans and rice with avocado and salsa on top filled a good part of my singular food pyramid for a hot second.
These days I cook a lot... I guess I always have, but it is different when you are cooking for another person like 92% of the time. I love cooking and finding new things to make, but every now and again, chopping up a sweet potato and roasting it at 425 for 15 minutes really does the trick.
