MOLASSES COOKIES

Cookies are comfort food. They speak to a part of the soul that conjures fond memories, in other words they are magic in a baked good.

The last few weeks have brought about a lot of different emotions… some good, others… let’s just say they weren’t the greatest. However, in times of hardship I found it incredibly comforting to pause, walk into the kitchen and concoct a batch of salted chocolate chip, carrot cake, or molasses cookies; each one transporting me to a happier time as waves warmth poured from the oven.

-MOLASSES COOKIES-

What you will need:

Preheat the oven to 350 degrees.

1.5 cups gluten free oat flour

1/2 cup coconut flour

3/4 cup brown rice flour

2 tsp baking powder

1/2 tsp sea salt

1/2 tsp black pepper

1 tsp all spice

3 tsp cinnamon

2-2.5 tsp fresh (finely) chopped ginger

1/2 cup brown sugar

1/2 cup coconut sugar

2 tsp vanilla

4 tbsp grassfed unsalted butter melted

2 tbsp coconut oil melted

1 egg

3 tbsp unsweetened apple sauce

1/2 cup molasses

1/2 cup sugar, set aside

In a large bowl, mix together all of the dry ingredients- flour, baking powder, salt, pepper, cinnamon, and all spice. Add in sugars, ginger, egg, apple sauce, vanilla, butter, coconut oil and molasses, stir until a stiff dough forms. Refrigerate for 1-2 hours or (if you are in a hurry) place in the freezer for 20 minutes.

Roll the dough into 1 inch balls and dip (or roll if you are a fat kid) in the 1/2 cup of sugar you have set aside. Place on cookie sheet and bake for 10-12 minutes (turn the pan half way through baking for even heat distribution).  Remove from oven and allow to cool so they don’t scald your mouth when you devour them (all).

The scent of ginger and molasses remind me of my mom, fall, and the approaching holidays. There is something special about molasses cookies, perhaps it is because they aren’t common, perhaps it is because they always seemed more ‘adult’ than other cookies, or perhaps it is simply the fact that they satisfy the soul in times of trouble.
